An afternoon of some fat rendering. Here we have the fats we live off: ghee, a ghee/bone marrow blend, duck fat, schmaltz (chicken fat), and goose fat. I freeze tallow/suet/lard in bricks. I try to render fat about once a month, but prefer to keep the bulk of that happening in winter when the wood stove is already chugging along anyway.

I nabbed that husband of mine, tied him to a chair, and plunked a microphone in front of him. Success! In this go around of our ‘dynamite’ talks, we discuss where we are in our preparations to eat solely from our farm this year. We also talk about working with people, paying cash, and the theme of the night in the ER on his previous shift.
